Vegetarian Weight Loss Recipes

I’m not a vegetarian but I have some vegetarian weight loss recipes that someone might want to use. I hope you’re having a great new year and am looking forward to a healthier and happier lifestyle. I’m pretty optimistic this year because I got a pretty severe wake up call. I got ill and it was my body’s way of telling me to get healthy. I’m starting to look at it as a message to get proper nutrition. So with that in my mind let me give some of my recipes:

Sliced Avocado and Strawberry Salad
Slice avocado and place on top of spinach or your choice of greens and mix with strawberries (or other fruit that is in season) and drizzle with vinegar and lemon

Skewers
You can put any veggie like onions, mushrooms, eggplant or peppers on a skewer, just cut into small squares and add.

To make a meat skewer, you can also add slices of  chicken or tofu, and then put skewers on the barbecue

Apples and Watermelon With Honey

Black Bean, Corn and Cheese Wrap
Heat canned black beans and corn, mash together with goat cheese and spread on whole wheat tortilla shell. Use low fat yogurt with any herb mixed in for dipping.

Popcorn With Cinnamon or Cayenne Pepper
Air-Popped Corn with Cinnamon/Nutmeg/Cayenne pepper

Sliced Avocado/Cucumber/Tomato with Balsamic Vinegar
Slice an avocado, cucumber or tomato and poor balsamic vinegar over, ready to serve.

Pea And Mint Salad
Bring a pot of water to a boil, then add frozen peas and snap peas and cook for 2 minutes.

Rinse peas and place in a bowl, then drizzle mixture of olive oil, white wine vinaigrette, lemon juice and mint, toss and serve.
